I Actually Cooked Something This Week

I actually cooked something for myself this week in an attempt to use up items in the fridge.  I tried out a great recipe for Ruth's Great Quiche I found on the Travel with Kevin & Ruth blog.  They eat a gluten-free diet and this recipe definitely works for that as involves a corn tortilla crust.  I eat gluten but don't enjoy making pie crusts due to the work involved and the fact that I have only made a couple ever - plus I had some corn tortillas in the freezer needing to be used up(fresh corn tortillas are almost impossible to get here).

You can use the recipe as a guideline and add whatever ingredients you like - I added broccoli, a leftover baked potato cut up, onions, bacon, and some corn.  It was amazingly yummy and I would make it again in a heartbeat.  I am not a big fan of broccoli but eat it when it is an ingredient in something else.  With hubby gone this was just the ticket-and the first quiche I have ever made.  I shall have to make it again for hubby some time.

I have managed to steam clean all the carpets, clean the fridge, stove, and microwave and catch up on all my most hated Company bookkeeping chores this week.  I took my Mom to The Second Best Exotic Marigold Hotel on cheap Tuesday - $6 including tax per person and we both loved it.  We had seen the first movie on Netflix and the second was just as good.

I have a bunch more items to check off the gigantic list before hubby gets home, but the most important ones have been accomplished.  I am not one of those people who need to get every single item done - I can leave a few for next week if I feel like it.

Buddy has been good company this week although I am tiring of being the only play companion and potty break person.  We will both be relieved when his other human returns.  I think I am going to go thrifting today for an escape now that he can be left for up to two hours on his own with no issues. Wish me some thrift store luck!

  5. My husband has just returned after two weeks away. I filled in the time by digging up the moss in the orchard and amending the soil. I swear our cat thought I had done away with his buddy and was burying him under the trees. Much wailing all the while I was working and some very hostile looks.

  6. You have been a busy girl. I also get tired when hubby is away being the only dog walker, feeder and play person. Pets take time and energy.

  8. You did a LOT!!! I loved that movie! Saw it with my oldest daughter! As a 67 year old senior citizen - it does my heart good to see these films with 'older' people starring in them! WHEN did Richard Gere get OLDER??? I remember him in An Officer and a Gentleman! Oh, MY!!!
    We have a brisket cooking as I write and plans for potato salad and baked beans tomorrow for a sibling gathering. Food is really rather IMPORTANT!

    1. Food is important. I did even better at the end of the week - had Mom over and BBQd for her. I will have to try and do the same the next time he goes away.

  9. Wow, you have gotten a lot done. I need to start on my Spring cleaning. I actually forgot about it until I read you list. Its just the house isn't as dirty as it used to be, I blame the kids.

    1. It is amazing what havoc kids can do to your home - the carpet cleaning was due in part to having a teenager in the house for a few months - the puppy was secondary lol.
