Sunset at Comox Marina |
Hello All! I am having a busy but good week. Just realized that I have a few shots I haven't shared with you from recent weeks. We finally had a decent rain of one hour yesterday but up until then our summer has consisted of beautiful sunny days, and even more beautiful sunsets.

Crab legs in spiced broth |
This picture is our crab fest from a few weeks ago - 2 bags of Crab at $20 each bag=fed 2 adults and 1 adult who eats like two. I spiced the broth with an oxo chicken stock cube, cajun spice and cayanne pepper. No, I didn't rush out and buy special spices - just out of the cupboard.

Bargain Tropical Plant |
I have taken my time decorating our home, there are even still some bare spots that need filling from our move here a year ago. Fortunately we spotted this tropical plant on for $7.50 at Superstore the other day and it has fitted in nicely. I hate to say how much I spent on the pretty ceramic pot we put it in ($35) but as I used the last of a giftcard given to me by the kids there was no guilt on the purchase.

First of the season blackberries |
Friday night we decided to go for an after dinner walk - until I spotted the fact that the first of the blackberries had ripened, two weeks ahead of last year. I ran home and picked three cups worth. Half went into these yummy muffins Saturday morning. I used
this recipe from simplyrecipes.com, using up the last of the sour cream from our perogie(no, I have not misspelled it, there are many spellings depending on country you are from) and taco nights. I save all the sour cream/yogurt/margarine containers I can for berry time - they are just the right size for freezing a cup or two and the berries don't break up like when you freeze them in bags.

Homemade Blackberry muffins |
I have been working more than half-time as they have needed a few extra hours to cover off until they hire another person so have been tired as still have company work to do when I get home. Last night we broke down and decided to go out for dinner (just after me saying we are not doing that anymore lol). We tried out a little hole in the wall Chinese/Vietnamese place. I am so glad we did as this was by far the best restaurant food I have had in six months. The service was iffy (icecubes in our beer glasses but maybe they do that in Vietnam? Anyone?) but the food was completely awesome. We will be back. A family run operation, they don't take credit cards (cash or debit only) but the joint was packed - in a town that is still struggling economy-wise on a Monday night. As hubby needs to get out of the house once in a while due to working from home it was a nice meal out. The food was the star - my mouth is watering just thinking about it (hubby scarfed down my leftovers for lunch today). It was reasonable enough that we can afford to eat there twice compared to one visit to other restaurants - absolutely no regrets other than I was lazy (tired really) and should have cooked.
I am looking forward to this weekend as Mom is coming for a visit as we have tickets to the Comox Air Show - it should be really good as we are an Air Force town. Have a great week everyone!

ReplyDeleteThe muffins look delish. The berries look yummy, too. I must remember to proof read before I hit publish.
ReplyDeleteNow I just have to get out there and do some more picking!
DeleteJust amazing - all beautiful pictures. I miss wild blackberries. When I lived in Mississippi, they would grow everywhere wild! You could eat and pick as much as you wanted. Amazingly, I never had any left by the time I got home!
ReplyDeleteHubby is like that, I took him to find them and all he did was eat!
DeleteWonderful photos.. LOVE the sunset.. The berries an muffins look delicious! What a nice plant you got and cheap too!.. Sorry, I can't comment on the crab because Im not a fish eater.. LOL I do hope it was delicious though :)
ReplyDeleteIt was good but lots of people can't do seafood. I actually think I like shrimp better.
DeleteYummy and beautiful! Maybe I should start looking for blackberries at camp....
ReplyDeleteDefinitely, maybe some blackberry martinis?
DeleteMuffins look delicious!
ReplyDeleteI've said it before, but you certainly do live in a most beautiful place!
Cheers!
They were yummy, we managed to finish them off (no good to my waistline though).
DeleteI love that you discovered in a hole in the wall restaurant and that the food was delicious. It's so Anthony Bourdain!
ReplyDeleteI love Anthony Bourdain! Especially when he goes to obscure countries, way more adventurous in his eating than I am though.
DeleteHOPE YOU ARE HAVING A WONDERFUL BIRTHDAY!
ReplyDeleteSft x
Thanks SFT!
DeleteWow your life looks picture perfect!!!
ReplyDeleteI would love to go berry picking! The best that I can do is to get a few berries off of the raspberry bush that we have. I can harvest about 6.LOL
Um, my life is not picture perfect but the scenery here can't be beat!
DeleteWhat a beautiful sunset over the marina... now I am reminiscing about our Canada holiday :)
ReplyDeleteNext time you come to Canada you should explore Vancouver Island, you won't regret it!
